Hello! I love this piece, and I consistantly find art using letters and symbols to shade within other colors, as used here. Do you know what this style is? It's fine if not, I just want to look into this world of a different style.

The term for only using a character set's symbols on a grid to make art is called textmode. You can try textmode out with Lvllvl.com or Playscii.
To clarify because I worded it funny, textmode is using characters and symbols on a grid to create art and includes stuff like Petscii, Ascii, and the like.
